After a long holiday season of gatherings, parties, presents and chaos, New Year's Eve is officially "the party we don't plan." It's an evening all about relaxing and finishing off the leftovers from Christmas, mostly chocolates and sugar cookies, while reflecting on the old year and looking forward to the new.
Among the favorite dishes for our unplanned New Year's bash is a chip dip affectionately known as Chip Stuff. Introduced by my husband, Chip Stuff is a simple dish that can be made early and kept in the fridge until party time. Just before serving, it is baked to create a hearty warm dip combining the flavors of cream cheese, chili and cheese all melted together into a gooey delight.
8 ounces sour cream and chives cream cheese, room temperature
15 ounces no-bean chili
½-1 cup colby jack cheese
4-6 ounces sliced olives
1 sliced green onion
Layer all ingredients in a nine-inch glass pie plate. Cover and refrigerate as desired. 20 minutes before serving preheat oven to 350 degrees and bake Chip Stuff for 15-20 minutes until warm and melty. Serve with tortilla or Fritos corn chips.
